As this is my first attempt at writing my own recipe I hope I have been clear enough. Please let me know if you need any clarification. I hope this turns out well for everyone trying it. I will also try to include photo's in the future.
Sweet Apple Pork
Ingredients
4 pork loin chops (I use boneless)
2 large potato's
3-4 large carrots quartered (lengthwise and width wise)
1/2 tsp thyme
1/3 cup white wine
1 cup vegetable stock
1 cup apple sauce
1 onion (diced)
1/2 cup white flour
Black pepper to taste
1 tsp mince garlic
1tbsp olive oil
optional: 50g thin slice prosciutto chopped
To thicken Sauce:
1/4 cup corn starch
1/2 - 3/4 cup COLD water
Saute onion, garlic, oil and optional prosciutto in pressure cooker. While onion is cooking combine flour, thyme and black pepper in a freezer bag and toss the pork (one at a time) into the seasoning. When onion is cooked add pork and brown a couple minutes each side. After pork is browned remove from pressure cooker and place to the side.
Place potato's, carrots, wine, stock and apple sauce in pressure cooker. When stirred to combine place the pork on top and push down into the liquid. Lock the pressure lid in place and cook on HIGH pressure for 9 minutes. Quick release the pressure and remove the lid.
Remove the pork, potato's and carrots. Combine the cold water and corn starch. Set your cooker back to Saute mode and wait for the remaining liquid to boil. Slowly add the cold water and starch mixture, constantly stirring (I also add a but more black pepper to taste). When the sauce reaches your desired consistency you can stop adding. Serve your plates and then place the desire amount of sauce over the pork and/or vegetables. I also serve this with steamed green beans. Enjoy :)
